Truffles are a fungus that grow and develop underground so before using them in the kitchen they must be scrupulously cleaned to remove all soil and other residue that may be present.
Truffles should be cleaned under running water with a soft bristle brush. Once cleaned they should be gently dried on kitchen paper and are then ready for use.
